There are tons of gluten-free waffle recipes out there to try. This one comes from the website of Bob’s Red Mill, vendor of many gluten-free flour products: Fluffy Gluten Free Waffles.
My only adaptation to the recipe was to use unsweetened almond milk instead of cow’s milk to make these dairy free. That tweak didn’t seem to adversely affect the waffles. The recipe is easy and we were happy with the end product.
As always, these are great topped with maple syrup, butter (or replacement spread if avoiding dairy), and your favorite fresh fruit, nuts, dried fruit, chocolate chips, etc. Nut butters would also be great to make it a to-go breakfast. The recipe made 5 big waffles vs. 8 as the recipe said.
