These guacamole eggs are lighter and fresher than traditional deviled eggs, with a nice shot of lime. Great for a warm weather snack with a margarita or some Sauvignon Blanc. If you’re going for low carb, these fit the bill — guac without the chips. A filling and satisfying appetizer, or could be a small meal.
I’ve been wanting to make these for a long time. I took a look at numerous recipes and settled on this one: Guacamole Deviled Eggs. Avocado is so creamy that you don’t need to add mayo. Some guacamole deviled eggs recipes added sour cream which didn’t sound good to me and didn’t fit with our dietary restrictions. These stick with egg yolks, avocado, salt and lime. Had me at salt and lime. The recipe I link to above is a good one and I didn’t change it significantly. A couple notes: one large avocado would be enough for this recipe. I used two and had tons of filling left over. The recipe also calls for chile powder sprinkled over the eggs for seasoning. I would just stick with smoked paprika.
