There are six ingredients. You will have peanut butter cookies in 15 minutes (that’s prep time AND baking time). What could go wrong? Basically, nothing. This recipe via PBS is just about foolproof. Throwing these together takes about 5 minutes, and baking 8-10. I was skeptical of how these could come together with no flour, but once you have the ingredients mixed well, it does have the right consistency for cookie dough. I’ve tried several peanut butter cookie recipes and they are all much more involved than this, with inconsistent results. I’ll probably stick with this approach from now on, especially since they’re gluten-free and dairy-free. I used regular sugar vs. the coconut sugar in the recipe, but will try that out next time. My only caution: these are super crumbly when they first come out of the oven, so give them a few minutes to cool/firm up before trying to move them.
