This is a super- simple, low-effort relatively healthy meal. Put the ingredients below in the crock pot and forget about it for a while:
1 lb. boneless, skinless chicken thighs, seasoned with salt and freshly ground pepper
3 stalks celery, chopped
8 oz. baby carrots
1/2 medium onion, chopped
16 oz. low-sodium chicken broth
14 oz. can chopped tomatoes with juice
dried or fresh herbs of your choice (I used dried oregano)
Chicken thighs add flavor and are usually less expensive than chicken breast. I cooked this stew on high for 5 hours and that worked fine. Lower and slower would probably be even better. Here’s what it looked like when it was ready:
Serving this over rice or with some hot, crusty bread makes for a nice meal. I also topped with torn up fresh oregano leaves and freshly ground pepper.
