Goat Cheese Tomato SaladThis is about as simple as it gets for a light meal or first course. Top mixed greens with quartered grape tomatoes, crumbled goat cheese (more flavorful if you buy a log of cheese and crumble it yourself) and strips of basil. For dressing, drizzle with EVOO and a light splash of balsamic vinegar. Add salt and freshly ground pepper. Delicious on a hot day or if you just need a dose of fresh flavor.
